Processed bread has so many ingredients in it these days. There are breads that are yeast free, gluten-free, sugar-free, you name it, but often they have 10 other ingredients to make up for it. The natural breads which contain only grain and yeast can be found at health food stores like the peanut mill, and usually need to be kept frozen.

I have just opted to avoid bread when possible, and focus on whole, unprocessed grains – quinoa and brown rice for example, or other starches such as beans or sweet potatoes, as sides. (I have a potato and grain intolerance so this makes yeast and grain together an intolerance. I have to separate them by 8 hours to be fully digested. If I did not have this intolerance, I would likely opt for Ezekial bread or a true sourdough bread).

My patient told me about a “bread” that she likes to make with seeds and oats. I tried it for myself and was like, ‘hallelujah!” I have something to dip into my eggs again! And, it’s quick to make, and does not need to be de-thawed, or hunted around town to find. It also makes a great snack. Here’s what you’ll need:

1/4 cup raw oats (I use gluten free oats)

2 tbsp. chia seeds

1 tbsp. ground flax

1 egg white (you can buy the boxed egg whites if you don’t want to waste the yolk)

1/8 cup blueberries (or more if you’d like).

blend up the oats, chia, and flax. Add the egg white, and a dash of water and mix by hand or with spoon. Add the blueberries and a dash of cinnamon if you like. It turns into a kind of dough. Flatten it, and heat it on a pan for a few minutes. When it’s done, it’s hard like a biscuit. You may want to experiment with different fruit or seeds. Double it up to make enough for 2 days.

This combo is 29 g carbs,15 g protein, 9 g of fiber, and 8 g fat

This is a great way to get your daily dose of seeds in. (Most of my patients get seed cycling prescribed for hormonal detoxification and balance). It is also a great way to get fiber, and anti-inflammatory compounds. It tastes lovely, and is protein rich, a great start to a regulated blood sugar, balanced kinda day.
