This is my all-time favourite cauliflower recipe. It’s easy, tasty, and has a comfort food kinda feel to it.

Cauliflower has so many health benefits; fights cancer, benefits the heart and kidney, part of a restorative diet, full of vitamins and minerals like vitamin C, vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese. It supports brain function (and it looks like a brain too! That’s the doctrine of signatures for you:) Helps with detox pathways, supports digestion, and full of antioxidants and phytonutrients.

Ingredients

  • 4 tomatoes
  • 2 cloves of garlic
  • 1 head of Cauliflower
  • approx. 2 tbsp. of olive oil
  • sea salt to taste

Preheat oven to 450 degrees. Chop garlic into small pieces and let sauté for a few minutes. Chop tomatoes into small pieces and add to garlic. You want to end up with a consistency of chunky tomato sauce, takes about 20-25 mins. In the meantime, chop cauliflower into small flowerets and place on a baking pan. Drizzle olive oil and add salt, and mix so all flowerets are covered. Place in oven and mix every 10 mins. Leave in for approx. 20-25 mins, or until slightly browned. Stir in with tomato sauce.This makes an excellent grain free, gluten-free side dish (and even tastes a bit like French fries! The kids will approve).
