I was looking to spice up my carrots, as plain old carrots have gotten a little boring ~hummus and carrots, juiced carrots, or hidden in soup.
If you’re trying to decrease sources of starchy carbs, higher carb veggies are a great substitute and also have the benefits of vitamins and minerals. Carrots are a good source of Thiamin, Niacin, Vitamin B6, Folate and Manganese, and a very good source of dietary fiber, Vitamin A, Vitamin C, Vitamin K and Potassium.
Tonight I tried this recipe and it was delicious! Was a bit sweet, so definitely did not need more than 1 serving. Every ingredient is also indicated on a restorative diet.
- approx. 3 cups thickly chopped carrots (serves 4)
- 1 tbsp. coconut oil melted (or olive oil)
- 1 tsp honey (I used maple syrup, can also use agave)
- 1/2 tsp allspice powder
- 1/4 tsp salt
Preheat oven to 450 degrees. Mix all the ingredients together in a bowl, then place the carrots in a large baking dish in a single layer. Place the carrots in the oven and let bake for approx. 15 mins. Stir them and let bake for another 10, or until they are crisp on the outside and soft on the inside.
This is considered a side dish, and takes the place of another starch on your plate, such as potatoes, pasta, rice, or bread. I found this recipe on pinterest here and modified it a bit.
